Cake Decorating Classes

Cake Decorating – Level 1

(2 Sessions back-to-back with 1 week in between)

A comprehensive 4-part class that helps students build a strong foundation on which they will develop the necessary skills to bake, fill and ice celebration cakes.

Skill Level: Beginner

Price Per Student: $125.00
plus cost of supplies

Day 1: Students will identify tools, tips & other ingredients for their journey in cake through lecture & demonstration.
Day 2: After review of the techniques from the previous lecture, students will begin their hands-on skill building exercises creating borders, filigree, drop flowers, foliage & the fundamentals for the buttercream rose.
Day 3: Students will resume work on perfecting their buttercream rose, then advance onto perfecting the placement of flowers.
Day 4: Students will bring their baked cakes to class & apply the skills they have acquired under the instructor’s supervision. Each student will leave the class with their uniquely finished cake sure to delight family & friends. Each student will have a certificate of achievement signed by the instructor!

Each session is 2 hours.

The instructor provides:

  • Handouts with recipes & assorted resource materials
  • 1 lb. decorator buttercream icing
  • Cardboard circles
  • Cake boxes
  • Parchment paper
  • Waxed paper squares

The student is responsible for the following supplies exclusively at The Chocolate Duck using their 10% discount. We only sell products used by our chefs. These items are essential to your class success so we must stress that substitutions purchased from online retailers are not allowed in this class.

  • 1 sleeve bakery filling (any flavor)
  • Gel Colors super red, egg yellow, leaf and/or moss green, choose 1 light color (i.e. pink, purple, peach, etc.)

Rolled Fondant Innovations

(2 sessions with 1 day in between)

This very detailed 2-part class covers 6 primary elements of fondant work. Then, the instructor adds more lays of innovative & trendy techniques over your hexagonal dummy cake so that every student leaves with a sample cake to use as a reference for years to come. From the novice to the seasoned pro, everyone will leave this class gaining from the experience of our chef’s Award-Winning techniques.

Skill Level: Beginner with Pre- Requisites to Intermediate

Price Per Student: $200.00
plus optional supplies

Day 1: Introduction to applications & storage of rolled fondant, identification of essential fondant tools, demonstration of cake covering, using stencils, templates, rolling pins & impression matts, fondant ribbons & bows.
Day 2: Review of previous lesson, marbling, ribbon flowers, crimping, dusting/painting.

Q & A Session after class clean up and there are always surprises!

Each session is 2 hours.

All essential tools, fondant, cake dummy, templates & recipes are provided however the students are encouraged to bring their favorite rolling pin, stencil of luster dust for personal use. This class is very interactive so be prepared to take notes, wear comfortable shoes & don’t forget your apron as there is very little down time.

Tool sharing is encouraged so please mark anything from your personal inventory that you bring to class.

Perfect Piping Techniques for Buttercream & Royal Icing

Spend your day immersed in icing as you explore the endless possibilities of design with a simple bag & tip. Students will learn the essential ingredients to a well-made decorator buttercream & royal icing & the mixing methods that ensure successful results every time. This class is exclusive to The Chocolate Duck patrons.

Skill Level: Intermediate to Advanced
Price Per Student: $175.00
Plus mandatory supplies

One- 5 hour session with a built in lunch break between buttercream (part 1) & royal icing (part 2)

Students will learn borders, filigree, coloring, painting, string work, link twists & much more.

Chocolate Molding

Our resident Pastry Designer will share techniques that will make your chocolate creations easier than you ever imagined. She will show you how to do the most basic molding to the more advanced way of hollow & solid molding.
